Yummy Bacon-Wrapped Wild Alaska Pollock

Wild Alaska Pollock wrapped with bacon

Yield: 4 servings
Time: 45 minutes

Ingredients:
4 Perfect Pollock Portion® fillets (each 5.1 ounces of Wild Alaska Pollock)
12 oz. bacon (about 12 slices)
1/2 cup brown sugar
3 large cloves garlic, minced
Salt and pepper to taste

Instructions:
1. Preheat oven to 375 degrees F. Set aside a 13 x 9 inch baking pan with a trivet or rack to hold the Wild Alaska Pollock fillets.

2. In a medium bowl, mix brown sugar, garlic, salt, and pepper together.

3. Lay the fillets on a work surface. Rub 1-2 tablespoons of brown sugar onto each.

4. Wrap each fillet with 2-3 bacon slices with a slight overlap, starting and finishing on the bottom of the fillet to secure, if possible.

5. Place into prepared pan and sprinkle any remaining brown sugar mixture on top.

6. Bake for 25-30 minutes, brushing or spooning juices from the pan every 10 minutes for extra flavor.
