Surimi Lettuce Wraps
Ingredients
- 8oz Surimi, Flaked and Lightly Chopped
- 14 each large green lettuce leaves, washed thoroughly
- 1 Medium Red Bell Pepper, Sliced
- 1 Carrot, Shredded
- 3 Tablespoon Green Onion, Chopped
- 1 Medium Cucumber, cut in half lengthwise and sliced
- Cilantro Leaves
- Mint Leaves
- 1½ Tablespoon Hoisin Sauce
- 2 Tablespoon Soy Dressing (Recipe Below)
- 2 Tablespoon Sriracha Mayo (Recipe Below)
Soy Dressing
- 1/2 Cup Soy Sauce
- 1/4 Cup Rice Wine Vinegar
- 1/4 Cup Water
- 1/2 Teaspoon Sesame Oil
- 1/4 Teaspoon Sriracha
Sriracha Mayo
- 1/4 Cup Mayo
- 1 Tablespoon Sriracha
- 1 Teaspoon Lime Juice
Instructions for Dressing: Combine all ingredients and whisk until incorporated.
Instructions for Lettuce Wraps
- In a small mixing bowl, add surimi, hoisin sauce, and 2 Tablespoon of soy dressing.
- Mix until surimi is just coated.
- Arrange the Surimi, lettuce, vegetables, mint, and basil leaves on a serving platter.
- Reserve the remaining soy dressing and sriracha mayo for topping the lettuce wraps.
