South-of-the-Border Wild Alaska Pollock Tacos

Ingredients
2 Perfect Pollock Portions® (5 to 6 ounces each), cut into bite-size pieces
½ onion, diced
Garlic, minced
2 to 3 fresh tomatoes, chopped
1 can black beans
Salsa
Salt
Pepper
Cilantro, chopped
Whole-wheat tortillas 

Garnishes:
Spinach
Cheese
Avocado

Directions:
Dice onion and saute in butter or olive oil. Add minced garlic to taste.
Add chopped fresh tomatoes and Perfect Pollock Portions® cut into bite-size pieces. Add 1 can black beans, salsa and salt and pepper to taste.
Add chopped cilantro to taste.  
Serve on whole-wheat tortilla and garnish with spinach, your choice of cheese, avocado, and more salsa.
