Sesame-Glazed Wild Alaska Pollock with Ginger and Scallions

Ingredients: 
Two Perfect Pollock Portions® (5 to 6 ounces each), cut in half
Kosher salt
1-inch knob fresh ginger, peeled and julienned

Sauce:
2 tablespoons soy sauce
1 tablespoon rice wine (sake)
1/8 teaspoon white sugar
1 tablespoon sesame oil

Garnish:
1 teaspoon Crunchy Garlic Chili Oil (for example, S&B Layu)
2 green onions/scallions, sliced
Toasted sesame seeds

Directions:
Pat the Perfect Pollock Portions® dry with a paper towel. Season both sides with salt. Top with julienned ginger slices. Place fish in a heatproof dish and into a bamboo steamer over several inches of gently boiling water. Pour sauce over fish and cover and steam for 10 minutes, or until cooked through Remove fish and place on serving dish. Remove ginger as well. Pour remaining sauce into saucepan. Heat on medium heat and reduce slightly. Pour reduced sauce over fish and garnish with sliced green onion, toasted sesame seeds, and garlic chili oil. Serve with rice and pickled vegetables.
