Seafood Mac N Cheese
Ingredients:
- 8oz Surimi, flaked
- 1 Cup Uncooked Macaroni
- 1.5 Tablespoon Unsalted Butter
- 1/4 Cup Diced Yellow Onion
- 1.5 Tablespoon A&P Flour
- 2 Cup Half N Half
- 2 Tablespoon Dijon Mustard
- 1 Cup Shredded White Cheddar
- Salt and Pepper
Bread Crumbs
- 1.5 Tablespoon Unsalted Butter
- 1/2 Cup Panko
- 2 Tablespoon Parmesan
- 1/8 Teaspoon Granulated Garlic
Instructions For Bread Crumbs
- Melt the butter in a saucepan or microwave.
- Mix the panko, parmesan, and garlic together in a bowl, season with salt.
- Add the melted butter and mix well, ensuring the butter coats the breadcrumbs. Set aside.
Instructions for Mac-n-cheese
- Preheat oven to 375F. Boil the macaroni in salted water until tender. Strain, rinse and set aside.
- Using a medium saucepan, melt the butter over medium heat and add the onion.
- Cook for 4-5 minutes until the onions are soft.
- Next, stir in the flour until incorporated with the butter forming a paste.
- Add the half N half and Dijon, season with salt and pepper. Simmer the mixture for 5 minutes and remove it from heat.
- Stir in the shredded cheese next, and then add the pasta, mix well ensuring the pasta is coated with the cheese sauce.
- Fold in the surimi flakes last.
- Pour mixture into a baking dish and top with breadcrumbs, bake 30-45 minutes, or until the breadcrumbs are golden brown.
- Let cool for 5 minutes before serving.
