Easy, Flaky Greek Baked Wild Alaska Pollock with Lemon and Garlic

Greek Baked Wild Alaska Pollock

Ingredients:
4 Perfect Pollock Portions®
5 Garlic Cloves (peeled and minced)
¼ cup Fresh Parsley (chopped)
5 tbsp Fresh Lemon Juice
5 tbsp Olive Oil
2 tbsp Butter (melted)
1/3 cup All-Purpose Flour
1 tsp Ground Coriander
¾ tsp Sweet Paprika
¾ tsp Ground Cumin
¾ tsp Cayenne
¾ tsp Salt
¾ tsp Thyme
½ tsp Pepper

Instructions:
Preheat oven to 400*F. 

Mix lemon juice, olive oil, and melted butter in a bowl, and set aside. In another bowl, mix flour, spices, salt and pepper, and set aside. Dip each Perfect Pollock Portion® in the lemon mixture, followed by the flour mixture.

Heat 2 tbsp of olive oil in a cast iron skillet over medium high heat. Add the fish to the skillet and sear for about 2 minutes on each side to give color, then remove from heat. Add the garlic to the lemon juice mixture and pour the mixture over the portions. Place the skillet with Pollock portions into the oven and bake for about 10 minutes, or until the Pollock flakes easily with a fork.

Sprinkle with parsley and serve immediately.
