Wild Alaska Pollock Transformed into Incredible Dishes by Dallas Chefs
Ten local chefs from the Dallas and McKinney, Texas area were challenged to transform Wild Alaska Pollock into new dishes they’d be proud to serve in their restaurants.
American Seafoods brought Wild Alaska Pollock – and the chefs brought creativity.
For the chefs, it was their first time cooking Wild Alaska Pollock as a center-of-the-plate fish. They quickly learned about Wild Alaska Pollock's versatility. By the competition’s end, the chefs fell in love with Wild Alaska Pollock – calling it transformable, approachable, and delicious.
“It’s a firm fish, which means it’s not going to break down easily,” said Chef Andrea Shackelford of Harvest Seasonal Kitchen. “You can almost treat it like a piece of meat. That lends to a lot of techniques.”

Third Place Winner: Sichuan Wild Alaska Pollock Hot Pot
Spice up your menu with this recipe by Chef Andrew Vu of Fine China, with a masterfully braised Wild Alaska Pollock fillet in a mixture of vegetables, spices, and rich broth. You’ll love the tender, mild fish combined with the spiciness of Sichuan peppercorns and dried chilies.
Second Place Winner: Pan Roasted Wild Alaska Pollock with Artichokes Barigoule and Lemon Fennel Marmalade
A beautifully seared serving of Wild Alaska Pollock is complimented by classically prepared artichokes and zesty lemon fennel marmalade in this dish by Chef Adam West of Local Yocal.
West was surprised by the flavor profile of the fish – it’s a light, mild, flaky fish, but that doesn’t mean it’s bland. “It’s completely wild,” he said. “It tastes like the sea.”
Winning Recipe: Seared Wild Alaska Pollock with Farro and Caramelized Mushrooms
This creation of Chef Josh Bonee of Scout won the competition with a tasty medley of Wild Alaska Pollock farro, caramelized mushrooms, and truffles, seasoned perfectly for a satisfying dinner.
“I’d absolutely put Wild Alaska Pollock on my menu,” Bonee said after the competition ended. “It’s delicious, it’s sustainable. It’s a good tasting fish.”
