Cajun Surimi Summer Pasta
Ingredients:
- 8oz Surimi, flaked
- 2 Cups Cooked Penne
- 1 Tablespoon Olive Oil
- 1 Tablespoon Cajun Spice
- 1 Cup Frozen Corn Kernels, thawed
- ½ Tablespoon Chopped Garlic
- 1½ Tablespoon Lemon Juice
- 1 Teaspoon Lemon Zest
- 1/2 cup Whole Milk
- ½ Red Bell Pepper, Sliced
- ½ Red Onion, Sliced
- 1/2 Cup Sliced Zucchini
- 1/2 Cup Water
- 1T Chopped Basil
- Season with Calt and Pepper
Instructions:
- Place a large skillet or Wok on medium-high heat and add the olive oil.
- Add the garlic, onions, Cajun spice and bell peppers, cook until the onions are soft, about 4-5 minutes.
- Next add the zucchini and corn and cook another 2 minutes. Finally, add the milk, lemon juice, zest, and water to the pan and simmer for 5 minutes.
- Season with salt and pepper.
- Add the pasta, ensuring it is well coated with the sauce.
- Fold in the surimi and top with basil before serving.
